Bibo Madrid-A true gastronomic experience

With two Michelin stars for his restaurant in the Marbella Hotel Puente Romano, chef Dani García brings his Andalucian fusion cuisine to an elegant venue in Paseo de la Castellana.

Thanks to its spectacular interiors, work of designer Lázaro Rosa-Violin, the supremely stylish brasserie has become the “it” place and one of the best to see-and-be-seen dining spots.

More than 7,000 light bulbs in a sophisticated representation of the famous Málaga fair illuminate the amazingly beautiful restaurant, while a giant hot-air balloon hanging over the bar takes diners back in time to the golden age of glamour.

On the eclectic menu, diners will find his signature dishes such as cherry gazpacho with fresh cheese snow, pistachios and basil, and the sumptuous foie grass and goats cheese millefeuille, as well as incredible cocktails designed by Héctor Henche.

As soon as we arrived, we were led to our seat which fortunately was just in front of the impressive hot-air-balloon. I instantly fell in love with the magical atmosphere and the speakeasy feel. Afterwards, a waiter offered us an extensive cocktail menu which was presented as an original French deck of cards.

Apart from being a visual delight, my Coco MC cocktail was utterly refreshing. Javi opted for a Tobacco Daiquiri, perfect for the sultry ambiance. As we sipped our delicious cocktails, a couple of appetizers were brought to the table.

Although everything on the menu looked so appetizing, I was willing to savor their  “Seabass Flower”. I was inmediately surprised by the beauty of the dish. The vibrant colors and wonderful flavor truly delighted me. Javi was tempted to order the “Burger Bull -Men” which looked absolutely irresistible.

Seabass Flower: Thin slices of seabass cured with beetroot, citrus dressing and extra virgin olive oil.

180gr Burger made from aged beef loin, Bull-sauce, Havarty cheese and butter lettuce.

We ended the meal sharing two amazing desserts: “Marbella´s Sun” and “Nutella To Die For”. The first one brought us to Southern Spain while the second one evoked memories of childhood.

Marbella´s Sun: Marcona almond cream, orange and orange blossom mousse.

Nutella To Die For: Nutella ice cream, caramel popcorn and hazelnut, toffee caramel, coconut cake and lemon jam.
